Tapatio Blanco is the flagship of celebrated master-distiller Carlos Camarena. Unavailable in the U.S. until recently, Carlos has finally allowed what might be the best bang-for-buck in Highland Blanco’s, across the border. Money saved by modest packaging and bare bones marketing efforts means the drinker is treated to the best value in the business.
This tequila is made the long slow way, as only the best tequilas are. First, only fully ripe, real Highland Agave is used, followed by 3 days of slow roasting to caramelize agave sugars just right. Then, rather than use modern milling machines to mechanically separate the sugary center, Carlos uses a traditional Tahona to more efficiently protect the purity of the sugars without imparting bitterness from the skins. Native yeast fermentations and careful distilling in copper alembic stills all play a role in ensuring the best possible spirit makes it into the bottle. The spirit that comes out of the bottle brings a gorgeous nose of subtle spice and Agave sweetness. The palate is gentile with the characteristic Highland white pepper throughout as a modest 40% ABV carries a smooth finish.
Our resident Sommelier Dean Medeiros has developed a fantastic twist on the classic Margarita to showcase the Tapatio’s range. Kissed with just a splash of high-quality Mezcal for a smoky finish, the Oaxacan Smoke is a great addition to the home bartender’s repertoire.

1/2 oz Gifford Pampelmousse French Grapefruit Liqueur
Topped with a layer of Del Maguey Single Village Mezcal “Chichicapa”
