From a relative newcomer in the world of French Champagne tradition: Champagne Nicolas Feuillatte is just 30 years old and in 2007 became the #3 Champagne in the world. This Brut is a quintessential cuvee: 20% Chardonnay, 40% Pinot Noir and 40% Pinot Meunier aged for 3 years. The wine exhibits aromas of toasted hazelnut, green apple, quince and fig. It is perfectly balanced and fruity, yet dry. The finish is rich yet crisp. I discovered these bubbles over 10 years ago and continue to discover something new every time I uncork a bottle.
